Not always happy with your pita chips? Too salty? Too hard? Not fresh? Well, make your own! Only takes a few minutes. One package of pitas (5) will make about 30 large chips. And save the bag to hold any leftovers. Today is the Preakness here in the States. Sounds like a good day for a snack and adult beverage while a friend and I watch it on TV. But, actually, any day is good for a snack and adult beverage, isn’t it?
PITAS
5 large pita bread
1/2 c. olive oil
1/2 c. grated Parmesan cheese
1 t. dried oregano
1 t. kosher salt
1/2 t. coarse grind black pepper
Preheat oven to 400 degrees F. Cut rim off pitas and pull the two circles apart. Cut each of these into 6-8 wedges (depends on how big you want them). Brush with the olive oil on the rough side. Place in a single layer on 2-3 baking sheets. Mix parmesan with oregano, salt and pepper. Sprinkle on chips. Bake 10 minutes watching closely as they get very dark in a hurry. Cool on baking sheets and store in a plastic bag.
FOR THE GUACAMOLE, I CHEATED AND USED 2 RIPE AVOCADOS WITH A DRY GUACAMOLE MIX. I ALWAYS ADD A LITTLE SOUR CREAM (ABOUT 1/2 C.) AND SOME LIME JUICE (ABOUT 1 T.) TO IT FOR TASTE. I AM CERTAINLY GOING TO ENJOY THE HORSE RACE THIS AFTERNOON!!! (And I have advised my friend not to ride her bike over as we may be naughty and over-participate when it comes to the adult beverage)!!!
