My portion???   Chicken Flautas...easy peasy!!!

We ate. We are stuffed. We can hardly move!!!

This is an easy recipe that I’ve had since living in Texas. It is hardy and delicious. It is relatively easy. It can be doubled to feed more. Try it!!!

CHICKEN FLAUTAS

4-5 cooked chicken breasts, skinned, boned and cubed
8 oz. cream cheese, cubed
1 can (4 oz.) green chilies
1 can (14 oz.) chicken broth
1/2 t. garlic salt
10-12 corn tortillas
3/4 to 1 c. cooking oil
6 oz. Monterey Jack cheese, shredded

Preheat oven to 350 degrees F. Place chicken, cream cheese, green chilies and broth in a medium saucepan. Heat only long enough to melt the cheese. Add garlic salt and stir. Remove from heat. Fry tortillas, two at a time, in hot oil for less than one minute. Do not crisp! Remove and drain well on paper towels. When cool enough to handle, assemble the flautas. In a baking dish, place tortillas, one at a time, and fill with about 1/2 c. chicken mixture. Roll up with seam on bottom. Continue until all tortillas are filled. Pour remaining chicken mixture over the top. Sprinkle on the shredded Monterey Jack cheese. Bake 375 degrees F for 30 minutes, uncovered. Serve immediately.
