Chunky Peanut Cup Cookies

See those big areas of chocolate??? Those are Reese’s Dark Chocolate Peanut Butter Cup Miniatures, coarsely chopped. What could be better to fix your chocolate craving??? These cookies are very good and the recipe makes about 40.

Chunky Peanut Cup Cookies

Preheat oven to 375 degrees F.
2 1/3 c. flour
1 t. baking soda
1/2 t. salt
Mix above in a bowl and set aside.
1 c. soft unsalted butter
1 c. brown sugar
3/4 c. sugar
2 eggs
1 t. vanilla
Cream above with a mixer until nice and smooth, Add flour and stir just until combined. Mixture will be very stiff.
1 c. unsalted peanuts (you can chop these or leave them whole)
1/2 of 12 oz. bag Reese’s Dark Chocolate Peanut Butter Cup Miniatures, coarsely chopped
Stir in peanuts and chocolate. Drop by scoop onto parchment lined pans about 3 inches apart. Bake for 10 minutes. Turn baking sheets and continue to bake until cookies are a golden brown. Cool on racks. I always get rave reviews on this cookie. Hope you do too!!!
